Derived from the Greek word “Hespera”, meaning “evening star”, Vesper Bistro & Bar is inspired by the tradition of gathering people together under the evening sky in devotion to good food and good times. Mysterious, chic and romantic, it also has links to the James Bond martini and the beautiful character Vesper Lynd.
Their first foray back home in Australia after many years as pioneers and leaders in hospitality abroad in the Middle East, Asia and Europe, Duncan and Marlane Fraser-Smith have created Vesper Bistro & Bar with the essence and soul derived from an immense appreciation for their travels and the unique cuisine of the Islands of the Aegean and beyond.
